I usually have all the ingredients on hand either fresh or frozen. So I make this smoothie at least a few times a week. Today I made it with frozen banana, frozen blueberries (I stock up at the market and freeze), Kale was from the market a few days ago and I had one coconut left. Today I added chia seeds, I love em and haven’t had em in quite a while. And dates are a must

I came home from school today really hungry and I needed something quick! I’m glad I had some fresh, organic farmers market produce that needed to be used up so I whipped up a quick, super yummy salad.
- ½ lb Spinach
- Juice from half a Lime
- 1½ qt Strawberries
- Wash Spinach and plate
- Drizzle juice from half lime over spinach
- Slice about half the strawberries and add over spinach saving some to top with
- Take the other half of strawberries and blend (for dressing)
- Drizzle dressing over spinach and strawberries.
- Top with remaining strawberries

I took Kale and chopped it finely, added salt and the juice of a whole lemon massaged it then let it sit while I chopped up the veggies: Cucumber, yellow bell pepper, celery, and added some strawberries. SO YUM!
